Baked Chicken Salad
Ingredients
- 6 cups chopped cooked chicken (or turkey)

2 T. lemon juice

3/4 c. mayonnaise, or more to taste

1 t. salt

2 c. chopped celery

4 hard boiled eggs (chicken or turkey)

1 can cream of chicken soup (undiluted)

1 t. grated onion

1 c. grated sharp cheddar cheese

1 1/2 c. crushed potato chips

10 - 12 croissants
Directions
Mix first 8 ingredients and place in 9x13 baking dish. Sprinkle with cheese, then potato chips. Refrigerate overnight, covered with plastic wrap. Bake uncovered the following day at 400 degrees for 20 - 25 minutes. Serve warm on croissants.
